For three generations, La Fabbrica della Pasta has been crafting pasta in Gragnano, Italy, a town famous for its pasta for over 500 years. They use local spring water and high-protein Durum wheat, extruding the pasta through bronze dies for a delightfully porous texture. The pasta is then dried slowly at a low temperature. We love that La Fabbrica della Pasta is one of only a handful of pasta makers left in the region to earn IGP certification (Protected Geographical Origin).
