Parigot & Richard | 'Quartier Libre' Extra Brut NV

Named for the freedom to do things their own way. Parigot & Richard built their reputation on Pinot Noir and Chardonnay, but 'Quartier Libre' — roughly, 'no rules' — is their love letter to Aligoté, Burgundy's punchy, often-underestimated white grape. Hand-harvested, extra brut dosage, with a pure and direct character that the winery describes as 'assertively indigenous.' An off-the-beaten-track crémant that's excellent with anything briny or fried.
