Guillaume Michaut's address says it all: latitude 47°N, longitude 3°E — the precise geographic intersection of great Chablis. His family has farmed eight plots in the village of Beines for three generations; Guillaume works them alone. His Petit Chablis is the entry point to the domaine, but entry point here means something specific: pure, saline Chardonnay with that Chablis-signature chalk-and-oyster-shell edge that you just can't replicate from Mâcon or California. Crisp, honest, and seriously easy to polish off.
