Domaine Didon | Bourgogne Blanc "Cuvée Longue"

Domaine Didon, founded in 2017 by David and Naïma Didon, is a biodynamic estate situated in Chassey-le-Camp, within the Côte Chalonnaise. The vineyard, known as 'Vignes Blanches,' spans approximately two hectares and is planted with Pinot Noir, Pinot Blanc, Chardonnay, and Aligoté. The Didons emphasize minimal intervention, utilizing spontaneous fermentation, whole-cluster usage, and aging in neutral vessels to produce wines that authentically express their terroir. 

Grape Variety & Terroir: The 'Cuvée Longue' Blanc is a blend of Pinot Blanc and Chardonnay. The 'Vignes Blanches' vineyard is characterized by limestone soils with minimal clay content, situated at an altitude of 350 meters with an eastward exposure. The Pinot Blanc vines are notably old, aged 76 years, while the Chardonnay vines are younger, at 5 years old.

Vinification & Aging: After hand harvesting, the grapes undergo immediate slow pressing. The wine undergoes malolactic fermentation and is aged for 10 months in oak barrels, followed by an additional 10 months in fiberglass tanks. The wine is unfined and unfiltered, with no added sulfites, adhering to the estate's zero-zero philosophy. 

Flavor Profile: The 'Cuvée Longue' Blanc 2022 offers a complex nose with aromas of citrus fruits, white flowers, and subtle mineral notes. On the palate, it is medium-bodied with balanced acidity, flavors of ripe fruits, and a lingering finish. The extended aging contributes to its depth and complexity. 

Pairings: This wine pairs well with a variety of dishes, including seafood, poultry, and creamy pasta dishes. Its balanced profile and complexity make it versatile for different culinary experiences.
