'The Great Escape' — and once you taste it, you'll understand the name. Étienne Calsac is a young Champagne grower whose grandparents planted the vines in Grauves, deep in the Côte des Blancs. He farms biodynamically and makes some of the most electric Blanc de Blancs in the region. L'Échappée Belle is his signature non-vintage: 70% of the most recent harvest blended with 30% reserve wines dating to 2011. Extra brut, 18–24 months on the lees. White flowers, chalk, preserved lemon, and a tense mineral spine from start to finish. Buy it by the case.
