This iconic and distinctive rosé is produced by Clos Cibonne, a historic estate located near Toulon in the Côtes de Provence region of France. Known for its pioneering use of the rare Tibouren grape, Clos Cibonne crafts rosés that stand out for their complexity, aging potential, and unique winemaking techniques.
"Cuvée Tradition" is made from 90% Tibouren and 10% Grenache, sourced from estate-grown, organic vines over 30 years old. The grapes are hand-harvested, and after fermentation with native yeasts in stainless steel, the wine is aged under a veil of yeast (sous-voile) in 100-year-old foudres for 12 months. This method, more commonly associated with Sherry production, imparts a distinctive depth and complexity to the wine.
The wine showcases a pale, onion-skin pink color and an aromatic bouquet of orange peel, exotic spices, and red currants, with subtle notes of sea breeze and minerality. On the palate, it offers a rich and textured experience with flavors of tangerine, cherry, and a touch of salinity, balanced by a crisp acidity and a lingering, complex finish.

This rosé loves the company of bold, sun-soaked flavors. Pair it with a seafood feast—think bouillabaisse or grilled red mullet for a true taste of Provence. It also shines alongside roasted lamb or herb-stuffed chicken, bringing out the savory notes in the dish. For a twist, try it with spicy Asian fare where its crisp acidity can cool the heat.
