Seven parcels, one stone: the limestone lacustre that local vignerons call 'Pierre de Champigny' — a rock formation unique to this small corner of the Loire. Château Yvonne has farmed biodynamically since earning ECOCERT certification in 2007, and La Folie is their entry-point rouge — though entry-point here means pure Cabernet Franc from some of the finest clay-limestone soils in Saumur-Champigny. Fresh, dynamic, and utterly food-friendly: red cherry, garden herbs, cool earth. Serve slightly cool with charcuterie, white meats, or Loire Valley goat cheese. Certified organic (ECOCERT).
