This elegant and complex white wine is crafted by the renowned winemaker Ramiro Ibáñez of Bodegas Cota 45, situated in the historic region of Sanlúcar de Barrameda, Spain. Ramiro's commitment to traditional methods and his passion for the terroir shine through in every bottle, creating wines that are both authentic and distinctive.

"Ube Miraflores" is made from the indigenous Palomino Fino grape, showcasing a luminous straw color and a captivating bouquet of citrus, green apple, and a hint of flor. On the palate, it offers flavors of lemon zest, pear, and subtle almond, underpinned by a pronounced minerality and vibrant acidity. The wine's saline finish and intricate structure make it an exceptional and memorable experience.

Pairings

Another fine and lovely wine from these folks - think of this as a Sherry-like wine (i.e. somewhat oxidative but light, no fortification, and absolutely delicious); amazing with  with seafood, especially oysters, clams, and grilled fish. Its crisp acidity and mineral notes also make it an excellent match for fresh salads, light tapas, and soft cheeses. Serve chilled. -AO
