Herbert and Carmen Zillinger's biodynamic estate is located in the southeastern part of the Weinviertel, within the Vienna Basin. Their commitment to biodynamic farming and minimal intervention winemaking results in wines that authentically express their terroir. 

Grape Variety & Terroir: This wine is crafted from 100% Grüner Veltliner grapes. The vineyards are situated at an altitude of approximately 230 meters (754 feet) and feature soils composed of loess, loam, lime, sandstones, and loess. The fine loess-sand (silt) includes silicates such as quartz, feldspar, mica schist, and clay, contributing to the wine's distinctive minerality.

Vinification & Aging: The grapes undergo whole-cluster soft pressing into large stainless steel tanks, initiating spontaneous fermentation with native yeasts. Fermentation occurs without temperature control, provided the must does not exceed 27°C. The wine is then aged for five months on the lees in large stainless steel vats, enhancing its texture and complexity. 

Flavor Profile: The 'Neuland' Grüner Veltliner exhibits fine minerality and spice on the nose. On the palate, it is juicy and refreshing, with a notable lightness and freshness. The wine is unfiltered, preserving its natural character. 

Pairings: This versatile wine pairs well with pork, vegetarian dishes, lean fish, and mild soft cheeses. Its balanced acidity and fruit-forward profile make it a suitable companion for both traditional Austrian cuisine and contemporary dishes.
