Collecapretta, managed by the Mattioli family since the 1100s, is a small artisanal winery located in the hamlet of Terzo la Pieve near Spoleto, Umbria. The estate spans approximately 8 hectares, with 4 hectares dedicated to indigenous old vines. The family practices natural viticulture, adhering to lunar cycles and avoiding chemical interventions, to authentically express the region's terroir.

Grape Variety & Terroir: The 'Selezione Le Cese' is crafted from 100% Sangiovese grapes. The vineyards are situated on hilly terrains with clay soils, employing the traditional Umbrian trellis system. This setup, combined with the region's elevation and soil composition, contributes to the wine's distinctive character.

Vinification & Aging: Harvested manually, the grapes undergo spontaneous fermentation without temperature control, with an 8-day maceration on the skins. The wine is then aged for two years in glass-lined cement vats, followed by an additional 18 months in used 500-liter barrels. Bottling is done without filtration, fining, or added sulfur, adhering to natural winemaking principles.

Flavor Profile: The 'Selezione Le Cese' exhibits a ruby red hue with garnet reflections. The nose offers earthy aromas, dried flowers, ripe red fruits, and hints of Mediterranean scrub. On the palate, it is rich and elegant, featuring a silky tannic structure and a long, creamy finish. 

Pairings: This Sangiovese pairs well with traditional Italian dishes such as pasta with tomato-based sauces, grilled meats, and aged cheeses. Its balanced acidity and tannic profile complement hearty and flavorful cuisines.
