Bollinger, established in 1829, is one of the few remaining independent Champagne houses, renowned for its rich, full-bodied style. The 'Special Cuvée' Brut is Bollinger's flagship non-vintage Champagne, embodying the house's commitment to quality and tradition. 

Grape Variety & Terroir: The 'Special Cuvée' is predominantly composed of Pinot Noir (60%), complemented by Chardonnay (25%) and Pinot Meunier (15%). The grapes are sourced from Grand Cru and Premier Cru vineyards in the Vallée de la Marne and Côte des Blancs, regions celebrated for their chalky soils and favorable microclimates. 

Vinification & Aging: After manual harvesting, the grapes undergo fermentation in stainless steel tanks to preserve their fresh character. The wine is aged on its lees for several years, enhancing its complexity and mouthfeel. The dosage is kept low, classifying it as Extra Brut, to highlight the purity of the fruit and the expression of the terroir. 

Flavor Profile: The 'Special Cuvée' presents a golden color with fine bubbles. The nose reveals a beautiful aromatic complexity, with ripe fruit and spicy aromas, including hints of roasted apples, apple compote, and peaches. On the palate, it offers a subtle combination of structure, length, and vivacity, with flavors of pear, brioche, and spicy notes, complemented by fresh walnut nuances. 

Pairings: This Champagne pairs well with a variety of dishes, including fish, especially sushi and sashimi, shellfish such as shrimp, prawns, crayfish, and grilled lobster, as well as poultry and white meats. It also complements nuts like cashews, cheeses such as Parmesan, and charcuterie like prosciutto.
