Brea Wine Co., a collaboration between Chris Brockway of Broc Cellars and Tim Elenteny, focuses on producing site-specific wines with minimal intervention. Their approach emphasizes organic farming practices, native yeast fermentation, and restrained use of oak to allow the vineyard's inherent qualities to shine through.

  • Harvesting: Manual harvesting at optimal ripeness
  • Fermentation: 100% destemmed fruit, fermented with native yeasts
  • Aging: Aged for 10 months in neutral French oak barrels to preserve the wine's freshness and varietal character
  • Alcohol Content: 13.5% ABV

This Cabernet Sauvignon offers a delicate expression of California Cabernet, with mild tannins in the background from the small berries.
