This caesar dressing is made without anchovies but still has a bold, umami-packed flavor that's perfect for tossing with romaine or drizzling over grilled veggies.
If using a food processor, add the garlic and Parmesan to the bowl and pulse until finely chopped. If not using a processor, finely mince the garlic and grate the Parmesan by hand.
Add all remaining ingredients except the mayo and pulse until smooth. Then add the mayonnaise and blend until combined.

Note: If you prefer a lighter dressing, reduce the amount of mayo to taste.
