There's cinnamon and then there's real cinnamon! There are several varieties of cinnamon. Real cinnamon should not be confused with Chinese cassia cinnamon, which is less aromatic and more bitter, but also a lot more common. Chinese cinnamon sticks come from a single layer of very thick and hard bark. Grind Ceylon cinnamon in the Lanka Shaker Mill at the very last minute to release mouth-watering flavors and aromas ideal for desserts (tartes, pies, etc.) and savory dishes (squash gratin, pork, etc.).
